Shellfish & spicy sauced pasta with baked mozzarella cheese phyllo twirl plus salad for dinner. Mussels, clams, local shrimp in a hot pepper/chunky tomato sauce over whole wheat pasta. A very belly happy meal.

Costco chicken, the chicken that keeps on giving…first meal was Musakhan and today, chicken pot pie, potatoes, mushrooms, peas and carrots with a stock made with the chicken carcass, it will be topped with garlic, cheese and herb drop biscuits

Mahi-mahi in a foil packet on the grill. I found this recipe I wrote down- had to be 35 years ago. Don’t think I ever made it. Note that the fish was canned tuna. 🤭🤭 I’m sure I thought this was pretty fancy at the time. But it was delicious 🤤 — messy to plate.

I think I’m becoming a lazy cook. Been going for simple meals, I think due to weather being so moderate and not wanting to be pinned to the kitchen. I’m also working on a new art piece that keeps drawing me back to my studio. Hope I’m not making hubs suffer with only a sausage sammie for dinner

Today’s dinner Musakhan, roasted chicken (I cheated with a Costco chicken) olive oil (lots), onions (lots), pine nuts (you guessed it, lots) over bread, in this case tortillas with a Mediterranean salad…

Finally made the pasta and it was ridiculously good. I sautéed 4c of diced yellow squash, half diced onion, 2 garlic cloves until it started to brown. Blended it w/1/3 block cream cheese, 1/2c milk, 1/2c cheddar & 3 tbsp parmesan. Blended it together. Topped w/garlic parm breadcrumbs. 😍🍽️😊
I was inspired by @neurospark.bsky.social to make soup with red lentils. Roasted nutterbutt squash, leek, and red lentil soup with crispy cured hog jowl and pepitas . 🤷‍♂️

It started out out as a cod fish taco but grew and grew. I think it became a burrito. But it was delicious. Sautéed cod, lime/yogurt crema, avocado, scallion, fresh tomato salsa, romaine,cheddar. Just simply good.

Slow-roasted ribs with a a brown sugar, spice and herb dry rub for 2 hours, then a great BBQ sauce for the last half hour for a tender bite of meat off the bone. Homemade coleslaw and toasted Asiago cheese bread on the side.

I’ve had a craving for lentils lately, so the NYT red lentil soup recipe went to the top of the list. It’s super fast and really delicious. I love a dollop of sour cream in a thick soup. Tore off some olive oil focaccia for dipping. Hit the spot.
