today I made 3kg of bechamel sauce (officially the biggest batch I've ever made), ~5kg lentil and meat sauce, ~3kg of lentil and mushroom sauce. only managed to assemble the meat sauce lasagnes, but I got 7 lovely little one-person ones out of it. mushroom walnut lasagne will be assembled tomorrow.
