I grew up in the 60's and 70's when they worked. I remember and much more functional democracy where prosperity was more widely shared.

Wide mouth jars are easier to pack. Make sure each jar has sealed after they have cooled 24 hours. Re-process (rarely needed) if they don't seal.

Listen for a "hiss" when prying open the lids. There should be some pressure in the jars.

Leave 1/2 inch of head space.

Cap the jars and place in canner with boiling water.

Once the water returns to a boil, process 10 minutes. Store in a pantry/root cellar/pump house/etc. They will last years.

Let them sit at least 4 weeks. 6 is better.

These are like vegetable candy.

The brine/syrup:

3 cups granulated sugar
3 cups white vinegar
3 cups water
1 tblsp salt
Wrap these in a piece of cheese cloth, tie shut and place in liquid.
2 sticks cinammon
1 tsp whole clove
1 tsp all spice whole
1 lemon sliced thin

Boil 5 minutes.

Water bath canning method. The brine/syrup has enough acidity that you don't need to pressure cook.

This is for 6 pints. Sanitize jars and lids. Keep jars hot/warm before packing with sliced beets cooked to al dente. Remove the skins on the beets 1/

I live in Eastern Washington, and they grow buttloads of them in the Columbia Basin. There's a huge sugar refinery there too. C&H.
