I’ve never made the same chili twice, but here’s how I made this one:
1. Bacon fat
2. Onions
3. NOT caramelized onions (pretty close though)

In the end, it turned out to be a perfectly fine soup, if a bit too thick and sweet. I roasted my own barley though, which was a nice touch.

I want to see if I could caramelize carrots like I can onions. Short answer: maybe, but not with the patience I had available. Tasted good though. They will be going into the next soup.
