I made a copycat chipotle rice bowl and it was literally so good omg
It's cilantro lime rice, corn salsa, seasoned chicken thigh, homemade pickled red onion, pico, and cheese
So good, and surprisingly easy to make? A lot of it you can prep the day before too

It’s been interesting to see the differences between insta and TikTok. 😔
I’ve been on insta for over a year now and I feel like I just kinda hit a wall with followers and interactions, whereas TikTok has been drastically different for the better.
We’ll see how that impacts my posting/focus
