As my mother’s cognitive decline progresses my ~78yo dad is taking on more household duties. Tonight he made chicken cacciatore from the @barefootneighbor.bsky.social “Keep It Simple” cookbook I got for his birthday. It was delicious; I’m so proud of him. 🍽️

I’ve been traveling for nearly 4 months. On January 27, as my nation began its rapid descent into xenophobic authoritarianism, I ordered this book and had it sent to my house. Then I forgot about it. What a surprise to find it today! I look forward to exploring the recipes over the next months.

After ~2 months in SEA I got hit by 🤢. Severe repercussions for that one ice cube in the 7-up purchased from a family on the side of a road while I took refuge on their porch from a rainstorm on my 14 mile bike ride outside Hoi An. Feeling almost human today, having vegetable noodle soup.
After being sick for 36 hours, I thought I was getting simple vegetable noodle soup. Photo shows large bowl of various root veggies, tofu, cabbage, mushrooms, peanuts, pineapple and more in broth. Under the plethora of veg hides some rice noodles. On an adjacent plate sits fresh lettuce, micro greens & bean sprouts. Hopefully my weak stomach can handle the bounty. But I haven’t eaten in forever and I need sustenance so I’ll give it a shot.

When you find dairy free baklava, you order it. And you relish each flakey bite. #foodallergies 🍽️ Chiang Mai, Thailand 🇹🇭
Sitting upon a glass plate on a shiny wood topped table in a small outdoor cafe is a delightfully flaky and delicious piece of baklava. The pistachio filling is crumbling out of the end of the pastry, tormenting the photographer because she feels it inappropriate to use her fingers to scrape them into her mouth. But desire won out over decorum and each tiny morsel was savored.

Hey knitters, what’s your favorite iPhone app for row counting? I’m traveling, and have three projects going, & only 2 counters with me. The third project would benefit from having 2 row counters going at the same time (one for rows, one for the repeats). Looking forward to recommendations! 🧶

The past few years my health issues have had me traveling to SEA to escape the cold and dark winter of the subarctic. Last night I had the most vivid dream that instead I drove a campervan to Mexico and lived on the beach. I ran into the Vanwives and helped them build a house. Next year maybe?

Today I accomplished a goal. As such, I decided a small solo celebration was in order. Gin & tonic, knitting and some great people watching in Chiang Mai, Thailand. 🍸 🧶 🇹🇭

Today in travel: the KUAC sticker on my coffee mug connected me to another Fairbanksan at a tiny coffee stand on the sidewalk in Chiang Mai, Thailand. And then we learned another customer had lived in Talkeetna for 5 years. 3/4 of the customers had Alaska connections. #AlaskaSky
