I actually happen to have some specialty ingredients on hand because I used to have a gluten-free coworker and it annoyed me that no one ever brought treats she could have haha. But I'll definitely look for some box mixes!

I haven't actually been to a family Thanksgiving in years since I live so far away but I recall my dad's Italian family usually ate either manicotti or stuffed shells (so, some variation on a theme of pasta with lots of cheese)
