I went to a Joel robuchon restaurant years ago. I was seated at the bar so got a bit of a performance by the staff preparing the food.

They asked if I wanted their "famous mashed potatoes" and I obviously said yes. The chef just got the potato and stirred in a huge bit of butter. It was great.
