She’s a sweetie. I had a calico about a half century ago, when I was a grad student. She made it clear who was the boss, and it wasn’t me. I got really tired of those 2am feedings.

Sounds intriguing but I think, for me, that’s maybe a bridge too far.
Leftover turkey in sandwiches is a really Good Friday evening dinner, though. Having that soon. More of it, next week, will be used in a tetrazzini and as an addition to jambalaya.

I haven’t tried that but now I’m tempted to. Next opportunity will be Christmas. Roasting a turkey results in many tasty leftover meals so I ought to do that more often than just for two end of year holidays.

When I’m baking I learned early on to get all ingredients measured out in advance. That alone eliminated a lot of chaos in the kitchen.

Lots of ways to roast a turkey and yours is a good one. I also do brining (only doing the turkey breast this year) and after drying, rubbing with canola oil, and tenting with foil, roast at 475 for 30 min and then reduce oven temp to 350 and continue roasting til temp is 165. Result is always good.
