I whipped ricotta cheese with some sugar. The sauce is made by pureed cooked beets, sugar and a bit of lemon juice. I put pomegranates between cream lyaers and on the top.

You can see the color of the soba is green because this soba contains green tea.
I used a tagine to make this dish. I thought the plate of the tagine looks like kawara.

150g/cooking liquid from boiling beets:80ml/milk:100ml/heavy cream:as much as you need/salt and black pepper to taste

Make the beet purée with cooked beets and cooking liquid and put it in a pot with azuki paste, milk and some salt and pepper.
Pour some heavy cream just before eating.

This time, I made this salad with leftover sliced banana blossoms, cucumbers and Thai basils.
The vinaigrette is made by lime juice, fish sauce, sugar and Thai chili peppers.

I also sprinkled a bit of salt on the sea urchin and the tomatoes after putting on the cucumbers. The final touch is myoga. It is a kind of herbs.
