It seems we can access the highlighted text (our color values) thanks to Zed ENV variables (zed.dev/docs/tasks#v...) and execute a bash script thanks to a custom task we could execute with a custom keybinding: zed.dev/docs/tasks#c...

After investigating a bit on their Discord and looking at the Zed Extensions doc it's not possible unfortunately. Zed extensions can't add UI.
I think the best alternative is to develop a Slash Command that converts colors as selected text. I don't know if it's possible though.
