The main reason I think dess is a perfect fit is because, narratively speaking, Deltarune is a parallel game to undertale, and who better to fit this games version of flowey than Asriels presumed dead/lost best friend in deltarune.

What's been rubbing me the wrong way is that so many people dismiss dess as a candidate because she's "missing" and "lost in the code". Well who else in the game would be a more perfect candidate to being turned into a shadow monster than someone who went too deep, Someone lost in the dark?

While Carol is still on my suspicion board, it leads me to think that dess is THE single most likely candidate for being the knight. The only other character in the entire game that we have seen dish out damage even remotely similar to the knight is Noelle on the snowgrave route.

These three things lead me to assume that the knight is not a random lightner but rather a lightner that got fused with darkner magic and can travel in the light world.

1. Hover and fly to the point that we have never seen them walk.
2. Posses insane levels of strength high enough to decimate entire health bars in single swings.
3. Transform into impossible shapes with minimal effort.
