There are plenty of this type of scenario analysis, and I don't see why it's such a big problem. It's also done all the time e.g. in risk/benefit assessments. They didn't aim to substitute specifically nutrient-poor foods, but "protein foods in the US typical dietary pattern"

Agree 100%. There are few studies looking at NOVA 3 foods, but they seem to find the same associations as with NOVA 4, or even worse. (e.g. www.thelancet.com/journals/lan... Likely driven by processed meat products etc. yet these are conveniently ignored.

The only thing "new" from these papers is that the authors acknowledges that UPFs are heterogeneous. Which means we are back to square one.
