Just got around to watching this today. I've been playing LOTRO on and off for a long time, its a comfort game where its more about the journey than the destination and its encouraged to take your time levelling.
I do recommend increasing the landscape difficulty to 3 (or 2) as its more engaging

Sounds about right. The new player help is usually pretty helpful in my experience but dependent on mods being active.
And for your mission it's probably just something in the UI you didn't know to look for.
As for losing a ship I can send you some idk to get back up and running if you'd like

If you're still open to it, eve university in game Corp seems to be tailored teaching people the game in a community environment. There are more exciting options if you want to catapult into pvp.

It's a complex game to start but now might be the best time to be a new player. I recommend asking in the help chat for a link to the corp recruitment chat and let people there know you are new and what type of gameplay interests you.
