Why did no one tell me that buttering your pancake pan is actually counter productive to getting the perfect surface.

Literally spent 5 years cooking brunch in kitchens and we always put fresh butter down for pancakes. But I’ve never made better pancakes than I do now

I went back and Re-read this interview and I thought it was great. He draws out a lot of the issues with the book but in a way that allowed for constructive but challenged response. I’ll say he definitely threw a few daggers in as the interview progressed.

I’m looking at research right now about the fluidity of aesthetic preferences across lifetimes and it highlights that both young and old people demonstrate higher rates of it but change of preference occurred at all levels.
What markers of identity do you think are more inherent to taste?
