Just did a test run of keto-friendly stuffed mushrooms and MAN these came out good. Stuffing is just the chopped stems, crumbled center-cut bacon, two diced cheddar sticks, salt, pepper, and a Laughing Cow Light wedge to bind the mix. Baked at 350. Whole plate is under 400 cal but tastes like 3000.
