I've seen this too. 80s-90s media *terrorized* ppl about undercooked poultry at a time which was extremely fat-averse as well.
I make whole chickens that cook longer than they need to sometimes. But they have butter/herbs under skin & are in a pan of juices + butter, so they just get more tender.

for some reason my (white) mother had this problem with whole chicken and not with chicken legs/quarters while my (very not white) dad just scowled every time and forced her not to be in charge of oven cooking chicken. glad to know it's universal.
