HOWEVER the default KDE network settings has configurable VPN options, Forticlient being one of them it's what I use instead and it's way more seamless

I find snap is usually the culprit, it makes a lot of things go weird, and it's way easier just to use a different distro than it is to rip snap out Ubuntu

If you right click on the title bar of the app and go to More Actions->Configure Special Window Settings
And then click Add property and add Desktop file name
You can manually specify the command/desktop file and it'll grab the icon correctly
