Bottom line is sure, GoG and itch could come forward and say "we are here for the art dont worry" but people who care or say they care about art need to show up because nobody else will

Yep, and the structures surrounding the videogame are designed explicitly to avoid that! But this is nothing new so I guess that at least this is an opportunity for people who care to start getting more vocal or active participating in all this idk

Maybe I'm being overly pessimistic and I hope I'm wrong but it's likely that Horses is going to be the current ceiling for that - I can't remember any art game not in Steam with this amount of visibility. So people who are really interested in games as art should buy it even if only as a statement.

See this is the issue for me. I really think that most customers dont really care as long as the algorithm keeps feeding them with some flavor of escapism. So the question is "how big is the market for art games when delimited to just people who explicitly want them?" and I guess we are about to see
