The gravy was caramelized Onions/Mirepoix, shiitake+oyster mushrooms, a Ceylon tea with clove, anise, ginger, orange peel, miso broth, molasses, orange flower honey...then was still missing something, soy sauce got the salt and savory to perfect balance.

Verdict: Weird, tasty, not as good as regular mash with turkey gravy by any means
