ASOIAF is an anachronism. It's an artifact from the 90s that became a juggernaut of 2010s TV, that George is now trying to finish in the 2020s, a totally different cultural era.

a peep may even peek and peer with peepers from a peak. (from a precipice or pinnacle, perhaps!)
but a peep who "peaks" atop a precipice? preposterous!!
it's not particularly important. "sneak peek" and "sneak peak" are both fine.

honestly I see the merits of "sneak peak". the spelling matches. there's a logic to it.
I suppose one could peek from a peak. a peak could be a perfect place from which to peek.
however I feel that "peek" fits well with "peep" and "peer" and "peepers".
