I haven't messed around with milk chocolate much, but I have loved ones who prefer that, so I did some messing around tonight. Made another batch of Bordeauxs. Filling came out better than the first batch...smoother. The chocolate is good. I personally prefer dark, but this is a good blend.

Okay, this isn't me being innovative ...this is me wanting to make a copycat of a chocolate I love. One of my favorite chocolates is the Bordeaux by See's Candies. So I made some, and I'm pleased to say they came out beautifully. Even got some high end chocolate sprinkles to complete the image.

For those who love visuals..,I chopped two bars each of my Cranky Bars and Chocolate Fireworks into squares to share with my Call of Cthulhu gaming group. Can't wait to hear what they think. Saving three bars of each to serve to friends on Halloween.

Generally I pour a layer of chocolate into my molds, chill it until it's solid, toss the fillings in, cover it with more chocolate, and chill. Then I pop the bars out, usually let them come to room temperature, and serve.

For the Cranky Bars, I used normal dried cranberries. I also used Planters Sweet & Spicy Dry-Roasted Peanuts. I got the idea for the Cranky Bar after eating these peanuts. I thought they'd be good with dried fruits...which then made me think of putting them in chocolate.

For the chocolate fireworks, I used regular store bought cinnamon, cinnamon sugar, and cayenne pepper. I used culinary crystals, which you can buy online. You have to be careful to let the chocolate cool to under 90 degrees, or it can make the culinary crystals pop when you pour it over.

I use Guittard chocolate wafers or chips. I use a blend of two bags of bittersweet to one of semi-sweet. Everyone who tries my chocolate goes nuts for this blend. It's a very complex flavor, with deep chocolate taste.
