Wikipedia article: Quatre épices is a spice mix used mainly in French cuisine, but can also be found in some Middle Eastern kitchens. Its name is French for "four spices"; it is considered the French allspice. The spice mix contains ground pepper (white, black, or both), cloves, nutmeg and dried ginger. Some variations of the mix use allspice or cinnamon instead of pepper, or cinnamon instead of ginger.

Fish Rice

Prepare 4 to 6 portions rice, boiled in meat stock. Hard-boil 7 eggs and cut them into small cubes. Brown 5 onions, cut very fine. Boil a fish, weighing about 21/2 pounds, and cut it into small pieces. When the rice is cooked and is ready, mix the fish and eggs with it. If desired, add curry to the rice until it becomes yellow.

Going through the official 1957 NATO Cookbook (?) and there’s a section where they asked the various heads of state to contribute recipes. You can tell which branch of the Nassaus converted to Catholicism and which one stayed Protestant.

Fanion Bleu

Take a fat chicken weighing about 5 pounds, draw it and remove the breastbone.
Then mix the following ingredients adding a little sweet cream:
An English loaf with most of its crust removed, and diced
About 4 oz. of brunoise of ham
and 4 oz. of chopped
pistachio nuts
4 whole eggs
Salt and pepper
4 spices
Condiments

Stuff and truss chicken. Salt lightly and put it in a saucepan with 4 oz. of butter and a dash of oil. Roast for about an hour, basting and turning from time to time. Remove the chicken and half the fat. Make a purée of 4 oz. of leeks, 4 oz. of
celery, 4 oz. of carrots and 8 oz. of mushrooms, and sauté in the remaining fat. Lace with a glass of champagne and the same measure of pan juices. Replace the
chicken in the saucepan and let it simmer for 10 minutes. Cut the meat in aiguillettes and use the stuffing as a base on which to lay the strips. Skim the fat off the sauce and pour it on the chicken. Serve very hot.

3 lbs. carrots
3 lbs. potatoes
1 lb. thin flank2
1/4 cup fat or margarine
2/3 lb, onions
Salt
Milk
Wash meat, boil in salted water for about 2 hours. Brush and mince carrots; peel, wash and mince onions and add them to meat together with peeled and cut potatoes. Boil until done (about 30 minutes).

Friday, August 28, 1942

Last nite depression about the New York trip got me in its grip and it continued this morning. Went over to George's. George went to get a prescription filled and after we came out asked me if I'd noticed a fellow in the booth, saying it was Freddy Pond, I remember with horror how I used to have to go over to his house after school and tutor him in his steps for dancing school. His mother, who later made the costumes for the exhibition, played the piano and Freddy bore it all with genuine patience. Mrs. Pond always said he idolized me but how I hated the whole boring business, just a bit of parental diplomacy. George says that Freddy is now "trade" even tho married and a father. I must admit that I don't know the meaning of that word, so often used among homos, but think it must mean someone who's willing only for money. George is so much more up on such things than I am.

Kathryn Hixson: Is your work gay literature?

Dennis Cooper: Gay literature isa useless term. It’s only useful marketing wise — the gay community supports its writers. There’s these bookstores that stock the book, publications that review the book — which is great. Heterosexuals don’t tend to get that. But my work is not about homosexuality at all, it's completely relative. It’s useless in that sense. I mean Genet and Burroughs...are they gay writers? Is Bataille a heterosexual writer? Its not about that at all. It’s not about homosexuality except that it’s something that puts you outside of culture, which is where everyone should want to be anyway.

KH: It puts you on the outside of culture?

DC: It gives you a vantage point, so you don’t have to participate in the same way, in the way society is set up. I mean the rules are set up for people who want to be happy and make a lot of money and have two kids and blah blah blah. If you don’t want that-if you’re gay or not gay, really, you don’t have to play that game- you can observe it. Homosexuals, all minorities, are excluded from being involved in the process, so you work the margins where everything great always happens anyway.

KH: You’re saying that you’re marginal and taking the outsider stance, but the writing is saying that you’re not.

DC: Well, our writing is not about gay society, gay ritual or thinking about what it means to be homosexual. Who cares?

Gary Indiana: It’s not about coming out of the closet.

DC: It’s about things that everybody’s... fear of the Other, or obsession- things that everybody can relate to. People who are interested in our work are not just gay people. Most gay people are not interested in our work at all. There are some weirdo gay people who are interested. I’ve been publishing for a long time and I’ve gotten attacked all the time by the gay press, because they say my work is not politically correct: I shouldn’t represent homosexual people as murderers, homosexuals should be repr…

Shout out to the Georgian era tailors busy making 2000s indie pop album covers in the 1820s/30s

Knee length coat with flaring skirt and slit at back. Centre front opening, fastened with single button at the waist and decorative buttons at breast. Wide olive green turn back collar and lapels. Long straight sleeves with deep velvet turn back cuffs. The fabric is made from small handsewn patchwork blocks of multicoloured plain & brocaded silks and silk velvets. I've always been intrigued by when/how The Velvet Underground Myth started. This 1970 article already uses the cult-favourite-that-were-too-ahead-of-their-time cliché and Loaded wasn't even released yet. VU & Nico came out just 3 years prior mind you
