Dandelion is a 'bitter', it supports the liver. Diuretic- Helps clear the damp and stagnancy that builds up in the body over a long winter...Leaves are rich in calcium and minerals. Roots are rich in prebiotic fiber inulin.....
Dandelion is one of my favourite herbs to work with, in the Spring
Once my cake cooled (25-30 mins) i sliced it through the middle. Spread the last of a yummy orange marmalade, sandwiched with cream+ topped with berries
&orange zest. Sieve in flour+ baking powder and fold the mixture to make a batter with dropping consistency. If its too thick, add a spalsh of milk as needed.
Bake in 6-8 inch tin in a 360F oven for 25 mins until done.
Let it cool.
For whipped cream-whisk 1 cup heavy cream+3 tbsp sugar+1 tsp vanilla
Sponge recipe-You'll need
125 gms each of softened butter, sugar and flour.
2 eggs
1.5 tsp baking powder
1 tsp vanilla extract
Zest of small orange (optional)
Splash of milk
Method-Cream the butter and sugar until pale and fluffy. Add 1 egg at a time beating well between additions. Mix in vanilla
