Just made macaroni cheese. The best yet.

Cook 2 cups of macaroni, drain, return to pan. Mix in tub of mascarpone, pinch of smoked paprika and 0.5tsp dijon mustard. Mix in 160g grated cheddar and 50g parmesan. Add a bit of milk to loosen the sauce and that's it.

When I get deliveries of chilled and frozen foodstuffs from environmentally conscientious suppliers these days it comes with wool insulation. It's compostable, but that's not an option here, so I'm thinking of using it for upholstery projects.
