I envisioned carving one on the evening of Halloween, having it in the house, on a table or at the window, and eating it the next day. It makes more sense that you could eat them if they were just used for the one evening and not the whole month.

I always thought they ate the Jack O Lanterns afterwards in pumpkin pie and it became increasingly confusing to see people carving and decorating with them at the beginning of the month, because they won't stay fresh enough to eat. Then I found out they grow special big tasteless ones for lanterns.
