I guess I assume that big chains who train their staff to a minimum level of competence sell a mass produced product to a completely undiscriminating customer base because they can.

That may be part of it but specialists seem to know that drowning coffee in too much milk to make it look like you’ve got more is at the expense of diluting most of the flavour.
If that’s true how come there’s such a difference between coffee from a small specialist independent and the big chains, or supermarkets, or garden centres or independents who don’t care?
