I have inventoried and made a price list for the Maker's Market this Saturday and I have about $1250 in product. I was hoping to get more smalls made, but I think I have enough for this weekend.

(ignore the messy background. I have been knitting instead of cleaning)
6 food white folding table laden with knit items. There are baby blankets, throw blankets, hats, dishcloths, a cup cozy and some baby buntings. It looks like a lot but doesn't feel like enough.

Ah, another evening of listening to the kid upstairs screaming and throwing herself on the floor, her big brother yelling and chasing her, and mom cussing at them to stop while she turns up the TV to drown out the noise.

We all know stores clear out after the holidays, but we tend to forget they need to make space for incoming product beforehand.

So go forth and shop smart, and don't forget to add an item or two or ten for your local food bank or Free Little Pantry.

I picked up three large boxes of potatoes for $1/ea this week. Last year, I found broths for 0.25/can. I typically find the stove top varieties of stuffing/dressing for 0.50/box and under. Two years ago I scored Better Than Bouillon for 0.63/jar.

These easier options do cost a bit more, but the meal will still be affordable overall and if you don't have the spoons, may be worth it for you. Take care of yourself and don't overdo.

If you don't have pre-shredded chicken in your freezer, or if prepping it is to much for you, canned chicken works well for this. While I don't like the sweet in mine, you might want raisins or some pre-cut fruit from the store to add to yours. Use what works for you.

Adding in some math not shown (because I'm easily confused) this will come out to about 0.95/plate for 1 sandwich and sides.

I'll have a lot to catch up on over the next few days so this will be my quick and easy go-to.

Keeping this simple with a little salt, some mayo and done. This made about 2/3 quart, enough for a couple of days of easy meals for me. I'm estimating 4 to 5 sandwiches.

If I had celery available, I would have added some diced to this.

I found some marked-down rotisserie chickens ($2/ea) at Walmart last week and chopped/shredded the breast of one of them ($0.75) I don't like sweet with my savory, so I'll have grapes on the side (0.50) along with a handful of chips. No nuts in the house, but i do have some sunflower seeds.

I've got the day off today, and I'm going to need to do some catching up on housework. In addition, my first market is in 11 days and I only have one bin of product made thanks to that thumb sprain.
