The sandwich includes a soft hoagie roll (B subbed his for a potato bun), a savory Impossible patty, grilled peppers & onions, melted Chao vegan cheese and house-made garlic mayo. All of these things come together so well, and the Roadside Raspberry Palmer I got was super refreshing to wash it down.
We wrapped up this year’s Twin Cities Vegan Chef Challenge adventures with dinner tonight: the Vegan Philly Cheesesteak from Wells Roadside. It’s honestly one of my faves from the challenge, and I hope they consider adding it to the menu!

We also ordered the Aloo Bodi (potatoes and black-eyed peas), and I got their house-made mint lemonade.

For dessert, we couldn’t resist trying the Carrot Coconut Crème Brûlée, which was incredible.

Today’s lunch was the top-notch Twin Cities Vegan Chef Challenge Masala Fire Tacos from Namaste Café! Masala-spiced tofu is served on corn tortillas & topped w/crunchy cabbage, pickled onions, avocado, cashew mayo, cilantro sauce & green chilies, along with a side of watermelon cucumber mint salad.
We also got some super refreshing drinks and incredible vegan cookies: oatmeal chocolate chip and citrus olive oil.
For dinner last night, we tried the Twin Cities Vegan Chef Challenge jackfruit tacos (with onion, cilantro, lime, avocado and avo salsa at Gigi’s Cafe. I loved that salsa! 🥑

We tried the amazing Vegan Lumpia that The Block in Rogers is making for the Twin Cities Vegan Chef Challenge as a snack yesterday afternoon!

The lumpia is a spring roll stuffed with Impossible burger, tofu, celery and cabbage. It's served on a bed of spring greens with tamari and pepper jelly.
We also enjoyed our drinks, B got a Tree Hugger (iced coffee with soy milk and maple syrup) and I got berry iced tea.

We also loved the vibe at Tiny Diner and their commitment to sustainability.

For brunch yesterday, we tried the Twin Cities Vegan Chef Challenge Coconut Curry Tofu Wraps (coconut tofu, crunchy corn strips and fresh radish, wrapped in fresh green lettuce) at Tiny Diner. They were super yummy, as were the sweet potato fries that came with it!

They were super yummy, and we washed them down with strawberry lemon kombucha and pear cider. B also got a cup of their lentil vegetable soup.

After a weekend away, we’re continuing our trek through the Twin Cities Vegan Chef Challenge!

Last night, we tried the Book Club entry: falafel burgers, which include housemade falafel with fresh lettuce, cucumber, tomato, dill pico de gallo, tahini aioli & tzatziki, served with sweet potato fries.
We ate well during our long weekend in Maryland! This isn't even half of what we ate, I was too busy in the moment to take pictures of everything.

We ended our meal with baklava, which is one of my husband’s favorite desserts, and not typically one of mine. I had told him I would just have one bite to try it.

But it is honestly the best baklava I’ve ever had, and I wound up having a few bites.

We also ordered the Awaze Tibs, which are one of the best things I’ve eaten this month! The tibs are seitan sauteed with Awaze sauce, onion, garlic, jalapeños & herbs, served with a salad.

Just like last time we were here, we got Suff, a traditional Ethiopian drink, & a Strawberry Banana Smoothie.
We had an incredible lunch at Lulu EthioVegan Cuisine yesterday!

We went for the Twin Cities Vegan Chef Challenge Chili Fries, which did not disappoint. The fries are topped with award-winning Ethiopian-spiced chili, nondairy cheese and sour cream.

We brought along some of B’s family for our #TCVeganChefChallenge lunch stop at Himalayan Restaurant!

The Chili Momo dish (crispy hemp and shiitake momo with sautéed peppers and onion tossed in tangy and sweet chili sauce, topped with crunchy noodles) was yummy! So was the chana masala we ordered.
Friday dinner & a movie! Before seeing #ShinGodzilla @emaginemn.bsky.social, we made a #TCVeganChefChallenge stop @ Chart House.

The Caribbean Vegan Bowl has jerk-spiced bean patty, jerk crumble, cilantro lime rice w/Argentinian chimichurri, fire-roasted corn salsa, avocado chimi-mousse & pepitas.
