Yes, I would say just keep trying it different ways. You might like it grated and sauted in spices for wraps tacos etc.

Today's first recipe is a super easy Roasted Vegetable Rice Bake.The oven does all the work. You don't even have to cook the rice first. Genius I say! And it tastes fab with all those roast veggies
