Roasted Chickpea & Veggie Flatbread with Lemon Tahini Drizzle
(Plant-based, Nut-free, Dairy-free, Egg-free)
Ingredients (serves 2-3)
For the flatbread:
1 can (15 oz) chickpeas, drained, rinsed & patted dry
1 small zucchini, sliced into half moons
2 medium carrots, cut into thin sticks or coins
1 cup cherry tomatoes, halved
2 tbsp olive oil
2-3 tsp Tasty Tin Garlic Dust (divided) **
Salt & pepper, to taste 2-3 dairy-free flatbreads or pita rounds
Fresh parsley or cilantro, chopped (for garnish)
For the Lemon Tahini Drizzle:
3 tbsp tahini (sesame-based, nut-free)
Juice of 1 lemon
1 tsp Garlic Dust
2-3 tbsp water (to thin)
Pinch of salt
Instruction
Preheat oven to 425°F (220°C).
Toss chickpeas, zucchini, carrots, and cherry tomatoes with olive oil, 1½ tsp Garlic Dust, salt, and pepper.
Spread evenly on a lined baking sheet. Roast 20-25 minutes, shaking halfway through, until chickpeas are crispy and veggies are tender + golden.
In a small bowl, whisk tahini, lemon juice, 1 tsp Garlic Dust, and water until smooth and pourable. Add salt to taste.
Just before serving, warm flatbreads in the oven or skillet until soft and pliable.
Top flatbreads with roasted chickpeas and veggies.
Drizzle generously with lemon tahini sauce.
Sprinkle with fresh parsley or cilantro.
Slice into halves or quarters for sharing. Enjoy warm or at room temp.
**No Garlic Dust on hand? Use 1 tsp garlic powder + a pinch of onion powder instead. But if you want the full flavor magic, Garlic Dust really makes it shine.

🫵🏾 UPDATE YOUR SEASONINGS!! And I don’t wanna hear about expensive bc even the dollar tree got seasonings.

I spent $45 yesterday updating my seasonings (17 bottles) w/ lite salt and salt free versions (bc Black, aging and fam history of high cholesterol and blood pressure)
