No matter what it is or the details I just think Carol playing a big role with the Knight or being the Knight and trying to do something with the prophecy regarding Noelle would explain so many things and I find that idea fascinating...

of her daughter. I would see Carol as The Knight trying to get to do something with the prophecy, trying to change its course or something to meet her goals. Or if Dess is The Knight I would imagine Carol having an influence over Dess.

I see The Knight being only either Dess or Carol, thinking it more likely to be Carol. The idea of Carol wanting Noelle to be in the prophecy or play a bigger role in it would explain why she acts that way towards Susie, who got to play the role of a hero of the Deltarune instead
