They don’t need to be coated completely— just tossed in a bowl so that most surfaces get some rub. These tiles aren’t large (like the pork shoulder) so a little goes a long way.

The reason I added a little sugar and paprika to my rub is for good browning. But most rubs already have both those ingredients.

I’m thrilled about your progress! You just need to stay patient and not overdo it.
Tell him any rub he likes will work. It depends on the flavor profile you want. I went with a chile verde rub for a Mexican profile, but you could go with more of a BBQ flavor, or whatever you like.
