Yeah culinary “authenticity” is a myth literally everywhere. It’s a ridiculous thing to police and there’s no way to even decide how far back to go before some dish counts as “authentic” because people have also always migrated like, everywhere??? I genuinely don’t get the obsession.

It’s definitely higher quality than Hershey’s or Tollhouse! I’d say it’s in the middle? Definitely more affordable than Callebaut for example

Weighing is the only was you can ensure your cookies are all exactly the same size and will bake evenly. (You should also weigh your batter between tins when baking cakes or muffins). 🍪 🍰

It’s just overall a much better quality than something like Tollhouse or Hershey’s and although it’s much pricier, I wouldn’t change it. I believe if you’re going to treat yourself, you should have the best quality cookie you can find 🫶
