Aka are good. Novation also, with a range in different sizes/budgets. TBH mostly these days I used a Launchpad instead of a keyboard, but it depends what I’m working on.

...part 2. Condenser microphones are more sensitive and better for vocals (in general). BUT they're over-sensitive for use outside an acoustically treated studio.

Yes you can plug your guitar straight in (most interfaces have some kind of feature to accept guitar level inputs, you'll have to check). It'll sound very dry unless you use plugins, or an amp modeller. OR mic up your amp! Get a dynamic mic like a Shure SM57 or a cheaper clone of it. Very versatile.
