In this case, the Darkwraiths and Four Kings would be considered an enemy wolf pack, as "the enemies of man, and any living thing that has a soul." that is threatening their human herd.

Full HC but I could see Gwyn's last command to him simply being to protect everything the Sun touches. People, animals, nature itself. Artorias goes "got it boss" and next thing you know he's making a covenant with the beasts of the Abyss to body the Dark on its home turf. Dude was a problem.

This puts him in the role of a protector (aligning with his last actions), but not in humanity's best interest. The jobs we see him take are "good" for both gods and humans at face value, but the reason behind them isn't. He's both a janitor & on damage reduction duty as everything boils over.

Artorias is the Wolf Knight because he's the lone wolf with a wolf buddy, but I also see him as the "wolf killer": Gwyn's own livestock guardian dog that is trained to protect the herd, i.e. the humans that Gwyn ordered his sons to shepherd.
