As an ex chef who specializes in Chinese cooking, cornstarch is your friend. Not long ago, a chef friend of mine brought me some curry. It was ok but the sauce was so damn smooth. Sure enough, i asked him how he did it, cornstarch. It was an, oh duh, moment, but damn that was velvety smooth.
